#1 Old Fashioned

A QUINTESSENTIAL CLASSIC

There’s no moment more quintessentially Bobeche than being perched by the pewter bartop, sipping an Old Fashioned. It’s far and away our most ordered drink and a great way to start or end your night. Charming and old worldly, with that irresistible waft of orange oil. It’s simple but one that takes time and craft. Our special blend of bitters helps show off the barrel notes in George Dickel, and is balanced out by the richness of Demerara sugar syrup. Finished with a single block of clear ice, stamped with our Bobeche butterfly and a twist of orange peel. Perfection.

George Dickel No.8 whiskey, house bitters blend, dark sugar, orange

#2 Bobeche Iced Tea

A RUBY RED NUMBER

Our prohibition style teapot cocktails are notorious for getting celebrations going. They’ve been with us since opening night and have never missed a beat. Coming in at number #2, the Bobeche Ice Tea is a ruby red, sultry number. A delicately spiced twist on a Long Island Iced Tea. There’s always a section of teapot cocktails on the menu, but none has come close to the popularity of the Iced Tea.

Ciroc vodka, Tanqueray No.10 gin, Pampero rum, cherry and sweet spice tea

#3 Pineapple Daiquiri

HAS NEVER LEFT THE CHARTS

Hitting the menu a couple of years back, we knew it could never leave. People went nuts for it and still do. We have regulars who order nothing but. The secret is fresh pineapple, chargrilled with just the right bittersweet caramelisation by the chefs at Heritage Wine Bar upstairs. Incidentally, where all our bar snacks come from too.

Chargrilled pineapple Pampero rum, lime, cold pressed pineapple

#4 Fraise Sauvage

aka Moulin Rouge

A HIT FROM THE SUMMER OF '15

First hitting our list back in the summer of ’15 it was inspired by the bartenders of New York City’s Employees Only. A colourful twist on the Parisian wartime classic, the French 75 which, so they say, packed “deadly precision”. It won over more than a few hearts and although it was only on the list for one summer it became an off-menu classic for those in the know.

#5 Hot Buttered Rum w/ fresh truffle

AN ODE TO OUR POPCORN YEARS

Regulars from our early days will remember the old popcorn machine churning all night long – it had the most delicious nutty flavour thanks to the coconut oil we used to pop it. The machine’s broken and in storage while we wait for the parts to fix it (a long wait in these crazy times) so in homage we came up with this special hot buttered rum for the winter months. A nod to the aromatic hot buttered rum drinks of old but using coconut butter. And an extra treat for truffle season, we managed to snaffle a bit of fresh truffle from the Heritage Wine Bar kitchen and infuse it into the butter. A delicious experiment you really need to try!

#6 Lady Marmalade

aka Breakfast Martini

POST MIDNIGHT FAVOURITE

A favourite for after the stroke of midnight, that has a knack of making any time of the morning feel respectable. Created by Italian cocktail legend Salvatore Calabrese who found inspiration on the breakfast plate, and created the marmalade toast of martinis. Genius. Our take on this modern classic arose when looking for a use for all the oranges we have left over from making garnishes. What was there to do but make out own Bar-malade?

#7 Bobeche Grapefruit & Chamomile Gimlet

AN OLD SMASH HIT

We love the classics and #7 is just that: elegant with an air of virtue. Another smash hit from our ‘15 list. Clearly a good year. It’s a bright twist on a 20’s classic but not too off-piste. By swapping out the lime for grapefruit and chamomile, the flavours in Tanqueray No. Ten really shine.

#8 Absinthe Frappe

THE ALICE ON ABSINTHE YEARS

This green wonder came about when we were writing the list for our first Alice on Absinthe Party in ‘14. They were good nights! Based on a classic morning pick-me-up, popular in 1800s New Orleans. Our take on the Frappe backs up anise and fennel aromatics in the absinthe with a bright pineapple syrup. It might not make you loopy, but it’s delicious.

#9 Charlie Chaplin

THE LOST CLASSIC

This one’s only made it onto the list a handful of times over the last ten years but now we’re questioning why. Such a beloved concoction that we always have the ingredients on hand for special requests. Bittersweet with just the right hint of sour to make your cheeks pucker in pleasure. A classic from the 1920s, straight from New York City’s Waldorf Astoria Hotel.

Hayman’s Sloe Gin, apricot brandy & lime

#10 East 8 Hold Up

A BITTERSWEET NUMBER

Now a Bobeche fave, we borrowed this number from legendary bartender Kevin Armstrong, of Milk & Honey in London. It quickly became one of our most popular new drinks of ’16. A bittersweet number that’s a favourite with those who like their cocktails juicy and without the boozy burn.
